Our Family Story

       Our ancestors, the Swartz family came to Georgia in 1899, bringing with them traditional German skills of smoking meat and dozens of recipes for spicing and curing meat.

In 1945 my grandpa couldn't find smoked meats as good as those his family made. So, he decided to open a small market to sell his smoked bacon, ham, and sausage to friends, neighbors and general stores around Americus and Albany Georgia.

My Grandpa was confident his meats would sell in the post-World War II economy. People were looking for something new and exciting to try – so he loaded his truck with his "exceptional smoked meats" and took to the road.

As he built his business, my grandpa taught my dad, who in turn taught me how to select meats with the right combination of leanness and tenderness. Every step is critical for creating quality smoked meats. Just as important, Grandpa taught us how to create his Applewood bacon, and the signature smoked flavor.

Times Change… Our Quality, Never Has

Of course, over the past eight decades of producing premium-quality smoked meats, we've made many production improvements, but our grandad’s commitment to quality and recipes have stood the test of time and stayed the same.

The story of The Georgia Ham & Bacon Company begins for me with the memories of an eight-year-old boy watching in wonder as my family transformed fresh pork into extraordinary hams, sausages and bacon. It wasn't just about making food – it was about community, about sharing with friends and neighbors, about understanding that the best things in life can't be rushed. That boy, now known as "Dan the Bacon Man," carries forward those same traditions today, not out of mere nostalgia, but because they remain the right way to create exceptional sausages, ham and bacon.

In a world of mass production and artificial ingredients, we stand as guardians of a different path. Each week, we transform just small batches of premium pork into extraordinary hams, bacon and sausage. This isn't a limitation – it's a guarantee of excellence. TODAY - The New Generation 


Our daughter (4th generation) Chef Jen graduated with honors from the prestigious Auguste Escoffier School of Culinary Arts in Boulder, Colorado. As an executive chef she has worked in some of the finest restaurants around the world. Today she stands at the forefront of crafting new delicious recipes and is the guardian of her great grandfather recipes. All while holding on to our family traditions, and southern heritage of quality smoked sausages, country hams and rich artisan bacon.
